In the ponds, the fish primarily feed on plankton, algae, and insect larvae that naturally occur in the pond. Additionally, the sturgeons are fed with local pumpkin press cake. The quality of the caviar is closest in taste to that of the original wild-caught caviar.
The natural rhythm dictates a harvest season from mid-September to spring – during the cold months. During this time, the caviar is at its best!
