Through short vine pruning, thinning of the grapes, and intensive canopy management, the conditions are created to harvest healthy and fully ripe grapes. The heavy clay soil also imparts a very typical spiciness to the grapes. The fully ripe grapes are carefully hand-selected and then gently processed further.
