At the Kathi & Daniel winery in Horitschon, working with nature is the focus. The two organic winemakers manage 16 hectares of vineyard according to organic principles – with respect for soil, climate, and biodiversity. They deliberately refrain from using chemical-synthetic agents, herbicides, or mineral fertilizers. Instead, plantings, insect hotels, tree plantations, and closed soil create an ecological balance where beneficial insects and birds find their place alongside deeply rooted vines.

The soils, shaped by the former Pannonian Sea, consist of clay-rich sediments with a high iron content. This terroir, combined with the warm air from the Hungarian plain, provides the ideal foundation for characterful and long-lasting red wines – particularly the Blaufränkisch, which showcases its origin in a particularly expressive way here.

In the cellar, the focus is on the careful processing and maturation of the wines. During the harvest, there is a bustling activity, followed by a period of calm so that the wine can mature in old large barrels, smaller oak barrels, and selected 500-liter containers. The wood supports the wines discreetly without overshadowing them. This way, time, care, and attention to detail create wines that authentically reflect the soil, region, and ethos of the winemakers.
